I Instagrammed these biscuits when I made them last year and they were such a hit I thought I’d post the recipe so we can all make them! They’re the cutest and easiest biscuits ever, and a great recipe to make with kids, although when I made them my niece was upset because she thought the snowmen were dying
They’re gingerbread biscuits with a lemon icing which is a fab flavour combination, and the snowmen are made from mini marshmallows. If you want to add an extra ginger kick you can use little chips of crystallised ginger for the snowman noses, and a handy tip is to use a cocktail stick dipped into food colouring to blob on the coal eyes and twig arms. Also, you might want to make yours look a little happier than mine, I went for all out snowman anxiety/pitiful reflection, but cheerier ones might be a little more festive!
I adore gingerbread so it’s safe to say I consider myself a bit of a connoisseur and I’ve found Jamie Oliver’s gingerbread recipe to be the tastiest and best texture. I’ve noted it down below:
- 300 g plain flour
- 1 teaspoon bicarbonate of soda
- 2 teaspoons ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 125 g unsalted butter
- 100 g soft light brown sugar
- 3 tablespoons golden syrup
- Icing sugar
- Lemon juice
- Mini marshmallows
- Black food colouring
- Crystallised stem ginger or little candy balls for the snowmen’s noses
- Preheat the oven to 180ºC/gas 4 and line 2 baking sheets with baking paper. In a large bowl combine the flour, bicarbonate of soda and the spices.
- Melt the butter, sugar and golden syrup in a pan over a low heat and stir until the sugar dissolves, then add it to the dry ingredients. Stir in until it forms a stiff dough, then cut it in half.
Right, now you have the dough, it’s time to get creative. I used a crimped cookie cutter that I think was about 2.5″ diameter, although any size work. If you don’t have a cookie cutter a well-floured glass works just as well! On a floured surface roll the dough to about 0.5cm thick and cut your circles. Transfer them to your baking sheets, (I find that using a spatula is a good way to do this if they get a little stuck) and bake for about 12 minutes.
Whilst they are cooking I made the snowman faces using marshmallows, black food colouring, crystallised stem ginger pieces and some orange candy balls I found in the Waitrose baking section. Using a cocktail stick I poked little eyes and mouths and used a writing by icing pen (but thick icing sugar and water would work fine) to stick on the noses.
When the biscuits are cooled you can ice them. I made a mixture of icing sugar and lemon juice, and then used a spoon to pour a bit on, but remember the icing sugar mix needs to be thicker than you think or all of the icing will just slide off. You can always add more icing sugar if your mix is too thin.
Stick the marshmallow heads on your biscuits when you have iced them, and once the icing is set draw on your twig arms and coal buttons using more black food colour.
Et voila! Super easy and scrummy melting snowman gingerbreads… So much easier than that intricate gingerbread house, eh?!
