Banana Almond Healthy(ish) Pancakes

In my opinion Pancake Day should be a national holiday. Or an international holiday. I am not religious, and I don’t bother with lent, I just go in for all the good bits! 

So in honour of tomorrow, one of the most fabulous days of the year, below if my favourite healthy-ish banana pancake recipe.

  

 You’ll need: 

2 bananas

2 eggs

1 tablespoon self-raising flour (just add more ground almonds if you don’t want to use gluten)

2 tablespoons ground almonds

1/2 teaspoon cinnamon 

1/4 teaspoon baking powder

A little coconut oil for cooking

It’s pretty straightforward: I just add all the ingredients to a blender and blend. 

Then heat a good non-stick pan on a medium heat and let the oil melt. 

I normally make small ish pancakes because without lots of flour the mix is a little more delicate than normal. 

Cook for about 1 minute and then flip and cook for about 30 seconds. 

Et voila! 

I think best served with blueberries, raspberries and maple syrup, although if you’re coldy like me, Manuka honey makes a great topping, and helps fight the germs too!
